The Maple Usuba @2014 Michael H. Mara The Maple Usuba has a 5" blade of 1/16" 154 CM, a high performance cutlery steel. Forged with an as-forged finish, chisel ground. Full tang for strength with Maple Burl scales, inlaid with Charoite and nickel silver, with 2 mosaic pins. A Usuba is a Japanese style of kitchen knife with a thin blade and sharpened on only one side (chisel grind). The purpose is to thinly slice vegetables without damaging the bulk of the vegetable. Hence the grind. It cuts away from the bulk, and is handed. That is to say, this grind is for a right handed person. The as-forged finish will also help prevent vegetables from sticking to it.
