The Cocobolo Santoku

This graceful general purpose Chef's knife has a 7-3/8" blade of 1/8" flat forged 154CM, hardened to HRC59, with an as-forged finish, and is 12 3-8" Overall. Brass bolsters and pommel, with hammered finish sections, and Mexican Cocobolo handle. A very powerful and versatile kitchen knife. $358 SOLD

Note that 154CM is a high carbon, high chromium cutlery steel, so the finish on this knife will stay as is, and won't tarnish nor rust like a simple alloy steel such as 1080 may.
